A server is where the game world is held. Although apearing as one server they are most likly made up of a cluster of individual machines to cope with the high loads atribuated to having thousands of players in a world.
[edit] Why Have Seperate Servers?
In Aion there are serveral servers that a player can choose from. They are all identical copys of the game world but are pysicaly seperated from each other so a player from server one cannot interact with a player on servers two. The reason behind having multiple servers is so that if a world becomes to crowded then players can be forced to create new characters on a different server to prevent any negative impact on the quality of play on the overcrowded one.
[edit] Test Server
This is where all testing is carried out of new content befor it is added to the live servers. Players are able to log onto the test server to try out the new content and with the main purpose of finding bugs and balancing it. All progress made of these servers will be wiped after the content is pushed to the live servers.
